Lizzy's Recipe || Chicken Salad

Hello and welcome to Lizzy's Recipe.
This is a new blog series where I share recipes that I learned throughout my life and especially through my family. So, sit back and enjoy some recipes I have in store. Also, majority of these recipes are budget friendly, but I'm not 100% sure for healthy eating. However, what I do know is that they're good! So enjoy some good eating. 


Chicken Salad

Things you'll need:
  • Boneless & Skinless Chicken Breast (3)
  • Canned Tuna (1)
  • Mayo
  • Canned Peas & Carrots (1)
  • Canned Kernel Corn (1)
  • Optional: Corn Chips or Tostadas 

Step 1: Start off with boiling water for 15 minutes before adding the chicken. Once the water starts boiling go ahead and add the chicken. Let the chicken sit for 20-30 minutes.


Step 2: Before taking out the chicken out of boiling water, please make sure it's done. The time depends on how high you have the stove on and how thick the chicken breasts are. Don't get salmonella. Once the chicken is ready; empty out the water and add the chicken to a bowl. I recommend letting the chicken cool for 5 minutes. After 5 minutes you'll need to start shredding the chicken. I do it by hand and it can take but up 15 minutes. 


Step 3: After shredding all the chicken. You'll add in the rest of the ingredients. The order doesn't matter, but I always add in Tuna first, then Canned Peas & Carrots, after Canned Kernel Corn and finally Mayo. I added a can of everything but its completely up to you on how many cans you want to add. I do sometimes only add one of everything except Tuna, I'll occasionally do two cans of Tuna. As far as the Mayo goes you can do two spoonfuls of Mayo. Optionally: Adding sliced jalapenos. It adds more flavor, but since I don't like jalapenos I skipped this step. 


Step 4: Mix everything together. When you're mixing you'll know if you need more Mayo or not. I also start off with a little bit of Mayo and add more along the way if its needed. 


Step 5: After Step 4, you're done with your chicken salad. & Taaadaaaaah, you're basically done and you'll be able to enjoy your chicken salad. By the way, I LOVE to eat the chicken salad with corn chips. ITS BOMB(DOT)COM.
